Ingredients

(Serves 4)

  •  400g Aberdeen angus mice meat 5% fat
  •  2 egg
  • ½ onion
  • 1 garlic clove
  • 50g croutons
  • Chilli flakes
  • Salt & pepper
  • 4 sweet potatoes
  • 4 tomatoes
  • 1/8 red onion
  • 1 clove garlic
  • Large handful of Parsley
  • Juice of ½ lemon
  • Olive oil for cooking

Updated by Rachel Surgeoner: Low calorie and low guilt spicy burger recipe that’s full of protein and flavour. Served with sweet potato fries and salsa.

Preheat the oven to 200 degrees °C

Cut the sweet potatoes into long chunks leaving the skin on. Place them on a baking tray, drizzle with olive oil and sprinkle with chilli flakes then place into the oven for 40mins.

Finely chop the onion and soften over a low heat in some olive oil. Add the finely chopped/grated garlic once the onion has started cooking.

Crush the croutons in a bowl into breadcrumb consistency.

Add the mince, the cooked onions and garlic and the eggs to the bowl.

Use your hands to combine all the ingredients together. Shape into 4 even burgers and gentle roll in flour

Cook the burgers slowly and ensure they are cooked through (check the centre before serving)

For the Salsa

Chop the tomatoes and red onion into small chunks. Finely chop the parsley, leaves and stem. Grate or really finely chop the garlic. Mix all the ingredients and add salt, pepper and lemon juice to taste.
