Updated by Rachel Surgeoner: I’ve never been to Scandinavia but I feel this would pass as a very Scandi meal! Fish, potatoes, radishes, loads of fresh herbs and lashings of lemon juice! It’s really tasty and cuts through the fatty mackerel.
Finely chop the radishes and the sugar snaps. Cut the cold potatoes and cucumber into small bite sized chunks and mix all together. Add the finely chopped herbs, yogurt and lemon zest and adjust to taste. Season with salt and pepper.
Serve really cold with the mackerel on top. Enjoy!
