Updated by Rachel Surgeoner: One of my absolute favourites – this is my standard packed lunch for work days. I have it with some hot rice – believe me the cold salad and the hot rice really works! Go long on the lime juice!
- Preheat the oven to 180C
- Place the salmon skin side down on a large piece of foil. Sprinkle liberally with the dried chilli flakes and fold in the foil to make a parcel. Place the parcel directly on the oven shelves and cook for 18 mins.
- Chop up all the ingredients into even chunks and mix together.
- Serve with the salmon hot or cold, as is or with rice or noodles work well too, enjoy!
