- 2 salmon fillets
- 1 mango
- 1 avocado
- 1-2 limes
- Handful of coriander
- 1 red pepper
- 10cm cucumber
- Stick of celery
- Dried chilli flakes
- Spring onion (optional)
LEANER LIFE : SPICY SALMON RECIPE WITH MANGO SALSA
Updated by Rachel Surgeoner: This spicy salmon recipe is one of my absolute favourites – this is my standard packed lunch for work days. I have it with some hot rice – believe me the cold salad and the hot rice really works! Go long on the lime juice!
Method
- Preheat the oven to 180C
- Place the salmon skin side down on a large piece of foil. Sprinkle liberally with the dried chilli flakes and fold in the foil to make a parcel. Place the parcel directly on the oven shelves and cook for 18 mins.
- Chop up all the ingredients into even chunks and mix together.
- Serve with the salmon hot or cold, as is or with rice or noodles work well too, enjoy!
