Classic – so easy and SO good!


  • 1 Fresh tuna steak
  • 2 organic free range eggs
  • Half a packet of green beans – cooked and can be warm or cold
  • Handful of olives – I use the Crespo dried pitted black olives
  • 4 tomatoes – vine are best
  • Handful of cooked new potatoes
  • Lettuce – your choice

I like my tuna seared or a bit pink on the inside. Heat up a griddle pan until it’s really hot then place the oiled tuna steak on for 1 minute each side. The cooking time will vary on the thickness of the steak and how pink you like it. The great thing is that you can see exactly what’s going on!

The perfect soft boiled egg – works every time. Pour boiling water into a pan with your room temperature eggs. Boil for 7 mins and I promise you’ll always get your perfect egg!  If you’re doing your eggs beforehand run them under cold water after the 7 minutes to prevent them from cooking any more.

Toss together the cooked green beans, olives, chunky tomatoes and new potatoes with a little olive oil and balsamic vinegar (if you fancy it!) and then place the warm eggs and tuna on top – amazing and super quick.
